In 2014 Stephen Lindsay, a qualified Chef with over 20 years’ experience in the restaurant and event catering industry, saw, that whilst the humble pie continued to be a popular choice - there was a real lack of quality in Scotland. His passion for food set him on the journey to create the perfect pie, a high standard artisan "chefs" pie. The flour Pie Not use is grown and milled just 5 miles from their industrial kitchen in Musselburgh. The meat, fruit, and vegetables are fresh and delivered daily from highly reputable suppliers. Their professional chefs weigh, press, fill, and cook all the pies by hand and are fully committed to sustainability, provenance, and of course keeping everything locally sourced.

Since Pie Not's inception in 2014, their popularity and reach have grown considerably across Edinburgh and the Lothians. Their commitment to a fresh, high quality, handmade product has quickly paid off, just a year after the first pies came out the oven, they were awarded their first accolade with a Gold, Silver, and Bronze at the UK wide British Pie Awards. In 2016 they grew on that success, winning 3 Gold medals. Their aim to become Scotland's premium, artisan pie producer, is fast becoming a reality.
